Minerva "Minnie" Enriquez Sandi, 55, of Spring, Texas passed away on Saturday, May 7, 2022, in Amarillo, Texas surrounded by her loving family. Mass of Christian Burial will be on Friday, May 13, 2022, at 2:00 P.M. at San Jose Catholic Church with Father Ramon Molina as celebrant. Burial to follow at West Park Cemetery in Hereford. Arrangements and services have been entrusted to Mendez and Mullins Family Funeral Home of Hereford. A viewing will be held on Thursday, May 12, 2022, from 1:00 – 8:00 P.M. at the funeral home with rosary beginning at 6:00 P.M.

Minnie was born on May 27, 1966, in Lubbock, Texas to Refugio and Teresita (Hernandez) Enriquez. She attended school in Hereford, Texas and was a 1984 Hereford High School Graduate. Minnie married Javier Sandi in Houston Texas and they shared 23 years together. She worked as a CNA for Villa Toscana Nursing in Houston. Minnie loved to fish, was a die-hard Dallas Cowboys fan, enjoyed dancing to Tejano music and grilling out with her husband Javier, and a collector of frogs. She was a strong woman, a protector, and very classy; always wearing her high heels. Her favorite color was purple. She enjoyed taking care of people and time spent with family. She was the life of the party, a jokester with a contagious laugh. Minnie saw the importance of communicating with family and no matter what or how far away she might be, she always made the effort to know what was going on with each of them.  Minnie was dearly loved and will be missed greatly.

Those left to cherish her memories are her mother, Teresita Enriquez of Hereford, Texas; husband, Javier Sandi of Spring, Texas; siblings,  Margie Guerrero and husband Chano, Rosie Medeles and husband Lionel, and Raymond Enriquez and wife Yolanda all of Hereford, Texas, Janie Mendoza, Connie Longoria and husband Abel, Little Joe Enriquez, Terry Reyna and husband Danny, Robert Enriquez and wife Sylvia, Linda Lopez, Lucy Enriquez and Davey Enriquez all of Amarillo, Texas; She was loved by so many nieces, nephews, and cousins.

She is preceded in death by her dad, Refugio Enriquez; brother, Cookie Enriquez, Jr.; and a niece, Desirea Peña.
